Fresh Pink Eye Peas In The Crock Pot

This recipe is simple to let the delicate flavors of the Pink Eye Peas shine. Just a hint of garlic, a little bit of sugar (because my grandmother said so!) and a little Liquid Smoke to give it a bacon free smokiness. I have included some optional ingredients to be used if you would like to mix it up!

Course: Side Dish
Yield: 4 as a side, 2-3 as a main

Materials

  • 2 cups fresh shelled pink or black eyed peas
  • 1 clove garlic minced
  • 1 tsp sugar
  • 1 tsp liquid smoke
  • 1 ½ cups water or low sodium vegetable stock
  • fresh ground black pepper and salt to taste
  • ½ medium onion sliced (optional)
  • 1 ½ medium tomatoes peeled and diced (optional)
  • 1 fresh jalepeño chopped, if you would like to add a kick! (optional)

Instructions

  • Add peas, garlic, sugar, Liquid Smoke and water or broth to Crock Pot. Cover and cook on high for 4 - 6 hours or 8 hours on high until beans are tender. Taste and adjust seasoning as needed.
