Cream butter and brown sugar until fluffy. Add egg, vanilla and salt; beat well.
In a separate bowl stir flour, baking powder, wheat germ and rolled oats together with a fork. Combine dry ingredients with wet ingredients adding 1- 2 Tbs water if necessary to hold mixture together.
Place by tablespoonful onto greased cookie sheet. Flatten cookies slightly. Bake at 375 degrees for 10-12 minutes until golden brown.
Notes
I was completely out of walnuts on the day that I made these cookies... so I substituted dark chocolate chips. What resulted was dark chocolate & raisin oatmeal cookie goodness. Next time I will try using all three.
