Whole Grain Oatmeal Cookies

Materials

  • 1/2 cup butter softened
  • 3/4 cup brown sugar packed
  • 1 egg lightly beaten
  • 1 1/2 tsp vanilla
  • 1/2 tsp salt
  • 1 cup whole wheat flour
  • 3/4 tsp baking powder
  • 1/2 cup toasted wheat germ
  • 3/4 cup rolled oats
  • 3/4 cup raisins
  • 3/4 cup chopped walnuts or toasted sunflower seeds
  • 1 pinch cinnamon

Instructions

  • Preheat oven to 375 degrees F.
  • Cream butter and brown sugar until fluffy. Add egg, vanilla and salt; beat well.
  • In a separate bowl stir flour, baking powder, wheat germ and rolled oats together with a fork. Combine dry ingredients with wet ingredients adding 1- 2 Tbs water if necessary to hold mixture together.
  • Place by tablespoonful onto greased cookie sheet. Flatten cookies slightly. Bake at 375 degrees for 10-12 minutes until golden brown.

Notes

I was completely out of walnuts on the day that I made these cookies... so I substituted dark chocolate chips. What resulted was dark chocolate & raisin oatmeal cookie goodness. Next time I will try using all three.
