Whole Grain Oatmeal Cookies

Materials
- 1/2 cup butter softened
- 3/4 cup brown sugar packed
- 1 egg lightly beaten
- 1 1/2 tsp vanilla
- 1/2 tsp salt
- 1 cup whole wheat flour
- 3/4 tsp baking powder
- 1/2 cup toasted wheat germ
- 3/4 cup rolled oats
- 3/4 cup raisins
- 3/4 cup chopped walnuts or toasted sunflower seeds
- 1 pinch cinnamon
Instructions
- Preheat oven to 375 degrees F.
- Cream butter and brown sugar until fluffy. Add egg, vanilla and salt; beat well.
- In a separate bowl stir flour, baking powder, wheat germ and rolled oats together with a fork. Combine dry ingredients with wet ingredients adding 1- 2 Tbs water if necessary to hold mixture together.
- Place by tablespoonful onto greased cookie sheet. Flatten cookies slightly. Bake at 375 degrees for 10-12 minutes until golden brown.
Notes
I was completely out of walnuts on the day that I made these cookies... so I substituted dark chocolate chips. What resulted was dark chocolate & raisin oatmeal cookie goodness. Next time I will try using all three.
